A rotating seasonal croissant built on our laminated dough — folded repeatedly with butter, slow-fermented, and baked until the layers shatter at the edges. The filling changes with the season, but chocolate is always at the center of it.
Currently: Lavender Chocolate Almond. Floral lavender against dark chocolate and almond cream, twice-baked so the top caramelizes into something crackled and golden.
Made in small batches in Ellijay, Georgia. Seasonal flavors run while they run — when the season turns, so does the filling.
